Garlic & Herb Brine

A timeless favorite - adds a classic blend of fragrant herbs and spices to any meat you want to cook. The hints of garlic, oregano, rosemary, and sage in the brine highlight the flavors of Southern France and draw the natural essence of the meat into a rich and complex circle of flavors.

This brine is especially good for meat with potent aromas, like game and lamb; the garlic and herbs in the brine will mute some of the gaminess of the meat.

Brining is an easy and convenient way to moisten, flavor and tenderize meat.

Brines are made of salt and flavor ingredients mixed with water and are used to soak meat before cooking. Brines work by the process of osmosis. Since brines have higher salinity than meat;  the salt ions and flavor ingredients in the brines infuse into the meat cells. This breaks down the meat cells, making the meat more tender and traps additional water in the meat. This "trapped flavored water" is absorbed into the meat . The end result is a more tender, more flavorable and juicier meat.
