Screens maintain pressure on product throughout cooking or smoking process. Presses boneless ham into a rectangular shape with a grid pattern on top and bottom of meat. The 1" grid pattern allows smoke and heat to easily pass to the meat, which can reduce processing time. High tension springs ensure ham stays firm and slices without breaking apart. Also, great when making Soppressa, Peppered Butts, Pastrami, Corned Beef, Turkey Breast or Proscuittini.
