22 x 24" Collagen Drying Sheet
These thin collagen sheets are used to wrap whole-muscle cuts for smoking, netting, aging or dry curing. They are durable and are typically used for meats such as prosciutto, capicola, pancetta and dry cured ham. Collagen will cling to the surface forming a skin providing a barrier against the outside air. This protects the product from contaminants while it is being dry cured. Tiny perforations allow moisture to escape and smoke to penetrate, thus retaining breath-ability.
