Temperature & Time Controller

This 6 step ramp and soak controller is simple to program and simple to use. Each step can be programmed to end when a certain time or a certain temperature has been reached. After reaching the programmed time or temperature  it will advance to the next step.  It uses a PID algorithm to automatically adjust power to the load to compensate disturbances from sun light and wind.

This controller has similar functions as our "dual probe plug-n-play smoker controller (Model AUBWSD-1500GPH) but is not limited to a 1800 watt load - This controller can handle smokers and smokehouses that require more than 1800 watts of power. This is done by using the its output  to power a solid state relay (SSR). This allows the user to operate almost any size load, from a solenoid, contactor coil or a large electric element. This controller can be installed and integrated into an existing smoker's control panel as a replacement controller.

The SMD-100 controller is designed for "Do It Yourself" person. This controller is not Plug & Play and requires some electrical knowledge.
  1. First, determine the incoming power from your breaker panel  - (110, 208, 220 or 240 volts)
  2. Next determine the wattage of the load, (heating element, hot plate, etc.)
  3. Now divide the watts by the volts to determine the amps the load will draw
  4. Choose a SSR that will handle the amps (We sell a 40 amp but there are larger ones available)
For example, if we use a 5000 watt electric element and we have 240 volt supply the load will be 20.83 amps.(5000/240=20.83)
So we will need to choose a SSR that is rated for 30 amps. We, of course, would need a 30 amp circuit available to power our smoker.

This is a panel mount and comes with mounting rails. Simply cut a hole and mount.

The main output of the controller is 12V DC. It is for controlling a solid state relay (SSR) . This solid state relay will be used to directly switch your power to the load. Once the controller is powered on and connected to the SSR control terminals ( labeled + & -) it will switch the SSR power terminals A1 and B1 to the load terminals A2 and B2 on and off as needed.

The controller also has 2 relay outputs - R1 & R2 - for controlling a smoke generator, a chiller or a shower. These small mechanical relay outputs can be programed to be off or on in any 2 of the 6 program steps. For example, user can use one relay to turn on a smoke generator in step 2 and the other relay to control a shower to cool the product in step 5.

You can power this controller with power ranging from 85 volts to 265 volts so it will operate with 110 or 220 volts. Below, in the related items area, you can find compatible components such as an SSR, probes, probe jacks, etc. for this controller.

Controller has 6 "Easy To Program" steps - The ending criteria of each step can be determined by either time or internal food temperature.  For cooking small sized foods or smoking the surface of the food, users can use the time to finish the step. When cooking larger products, because it is difficult to know how much time is needed, use the product's internal temperature to complete a step

For example to process sausage you can program the controller for the full 6 steps or you may use less.

  1.     Dry at 140°F for either 1 hour or until the internal temperature reaches 100° F  (Raw product with dry tacky casings ready to take smoke)
  2.     Smoke at 150°F for 2 hours or until the programmed internal temp is reached (Raw product with smoke flavor *- Pull at this point if you intend to finish later on the grill or stovetop)
  3.     Cook at 165°F  for 2 hours or until your internal temp reaches 140° F (Rare product - Pull at this point to prevent overcooking if you intend to finish later on the grill or stovetop)
  4.     Finish at 185°F until the internal temp of 155° F is reached  (Fully cooked product - ready to eat)
  5.     Shower for 12 minutes - to rinse any smoke residue off the sausage and to kill the cooking process preventing excessive shrinkage
  6.     Hold and let bloom at 90° F for 1 hour – for color enhancement

The programing function can also been turned off allowing its use as single set point controller for simple operation. The controller has the ability to store up to 8 profiles for different recipes, ie, one for smoked links, summer sausage, snack sticks, jerky, smoked hams, etc. Once programed just select the profile you want and start smoking.

The controller has two sensor inputs. One sensor is for measuring the smoker cabinet temperature and the other sensor is for measuring the food temperature. The controller regulates the  temperature by sampling the  temperature difference between cabinet sensor and the set point (desired) temperature. The food sensor is used to check the internal temperature of the food. If the ending criteria on the controller is set to temperature the controller will advance to the next  step when the internal temperature of the food is reached.
