Funnel - Stuffing

Stuffing Funnel
This stuffing funnel makes jalapeno stuffing easy. Simply fill the funnel with stuffing, then place the funnel in the top of the first jalapeno in the rack and use the push rod to push the stuffing into the pepper. Continue pushing the stuffing into the pepper, raising the funnel as the pepper fills. Move on to the next pepper. Refill funnel as necessary until all of the peppers are filled.
Designed to stuff jalapeno peppers, it can also be used to hand stuff hog, beef or sheep casings when making links.

Sausage and Cheese
- 36 Jalapeno Peppers - cored and rinsed
- 16 oz. blocks cream cheese, softened
- 1 lb. breakfast sausage
- 1 TSP Cajun Seasoning
Crumble sausage into skillet and add seasoning. Cook until no longer pink. Add cream cheese to hot sausage and blend in.
Stuff into cored and seeded jalapenos peppers using jalapeno or jerky stuffer. Place on Jalapeno Rack. Place rack on cooking sheet to catch drippings. Bake in oven at 350 degrees or grill at 275 degrees. At 45 minutes check peppers for doneness. They will be tender when done.

Boudin
- 36 Jalapeno Peppers - cored and rinsed
- 3 lbs. Boudin Sausage – (Remove casing if any)
- 1 TSP Cajun Seasoning
Warm Boudin in skillet and add seasoning.
Stuff into cored and seeded jalapenos peppers using jalapeno or jerky stuffer. Place on Jalapeno Rack. Place rack on cooking sheet to catch drippings. Bake in oven at 350 degrees or grill at 275 degrees. At 45 minutes check peppers for doneness. They will be tender when done.
