Dextrose - Corn Sugar
Only about 70% as sweet as cane sugar and quite a bit heavier which helps it to mix Better. Helps reduce nitrate to nitrite as meats are cured.
- Use Dextrose to increase water retention in meat products - use 1/2 to 1 cup per 10 lb. of meat
- Using Dextrose will counteract the harsh flavor of salt in brine - use 1-1/2 lb. for 5 gal. water
- Dextrose is the perfect food for lactic acid, which lowers pH when fermenting sausage giving us the desired 'tang' flavor
- Can be used as priming sugar when brewing - use 1 oz. per gallon when bottling
