To provide safe products it is necessary to chill quickly after killing. Water based chilling is common in commerical operations because it is very effective. During the chilling process some water is absorbed into the meat. After processing and packing the resulting fluid, a mixture of blood and water known as "wash", is released into the package. Because water provides a good medium for bacterial growth and because no-one wants wash all over their kitchen bench, these pads help control this danger
