Charcuterie Dry Bag

This Charcuterie kit makes delicious dry-cured products, such as duck prosciutto, prosciuttini, guanciale, bresaola, pancetta, lonzino and capicola at home, in your refrigerator. These special membrane bags are BPA free and moisture permeable. They protect the meat while aging/drying by forming a membrane that is easily peelable after drying and blocks odors and elimates mold while drying.

his kit comes with:    
  • 2 PiecesUMAi Dry® bags - 8" x 18" - suitable for 6-8 lb. Of meat
  • 3 PiecesUMAi Dry® bags - 10" x 11" - suitable for 4-5 lb. Of meat
  • 5 Vacmouse® vacuum aid strips - enables UMAi Dry® bags to be used with a vacuum sealer (not included)
  • 6 Tsps. Instacure # 2 - enough to cure 30 lb. Of meat
  • 1/2 Oz. Juniper berries  
Use of a vacuum sealer is required
